Milk Chocolate & Honey Tartlets

A take on the classic chocolate tart, with a twist. This dessert is ideal for dinner parties, easy to make and looks really effective. A slight change using milk chocolate and a dash of honey for an extra bit of sweetness. A good chocolate to use is the Chocolaterie de l'Opera Adagio Milk, this will give a good clean finish to the tarts.

Recipe - Serves 10 using Pidy Trendy Shells (Round, Triangle or Square)

210g Whipping Cream
50g Unsalted Butter
50g Honey
250g Chocolaterie de l'Opera Adagio Milk Product code: LOP.ADA381

•  Bring the cream and the butter to the boil

•  Remove from the heat and stir in the chocolate until melted and smooth, then stir in the honey

•  Fill the Trendy Shells to the brim, place in the fridge for at least one hour and then serve.

For the Chocolate Box Garnish

•  Melt 100g white chocolate and 30g dark chocolate, spread white chocolate onto baking paper and pipe lines of dark across and feather through with a cocktail stick. Allow to set and cut into 3 inch squares. Six per plate.

•  For the chocolate box filling whip 200g double cream, mix in 50g chopped dark chocolate and 50g Griottines and a dash of sugar to taste.

•  Place one square of white chocolate onto the plate and place a tablespoon of filling onto the disc. Arrange four squares around the filling to form a box and one on top to finish.

For the Caramelised Bananas

•  Cut 3 bananas into 1.5inch rounds, sprinkle with caster sugar and glaze with a blow torch until caramelised.

For the Caramel Sauce

•  Heat up 200g of caster sugar in a heavy bottomed pan until golden caramel, remove from the heat and gently pour in 400g double cream. Bring back to the boil until thickened and smooth, then strain and cool.

•  Assemble the dish as shown, finishing with a drizzle of caramel sauce and a dusting of icing sugar.
